I recently discovered the major pitfall of reading a book on the culinary history of New Orleans: my stomach has become convinced I have moved to the desolate places and it will soon wither from starvation unless I find it some andouille and tasso gumbo right now. Or crawfish etouffee. Or fried oysters on a loaf of Gambino bread.
The other drawback of course is a sudden craving for mayonnaise.
